This is what I put together to do Atomic Cycles' Coaster Brake Challenge. It's not too special, or custom really, but I'm pleased with it so far and think it's a cool ride.
It's simple; needed a coaster brake so search craigslist and I find this sweet Raleigh beach cruiser. It was in good shape and rode pretty nice, so I almost felt bad to molest it. But no big deal, it has to change! It's aluminum frame had to have the head tube shortened a little to fit the cheap suspension fork I had. Swapped on knobbies, a longer bmx crank and 36t sprocket, along with the mtb bars and a new brass bell, and it's ready!
It rides pretty well and even if I can't win anything, I'll probably keep it as a mountain cruiser for a while.
And of course the front disc brake will come off before the race.

Sweeet! I've got a newer Trek cruiser I've done almost the same thing to(no suspension fork yet). Your's looks awesome. 8)
