yea me too I love his bikes!
I am thinking my brooks B72 a rack and Panniers
I already swapped the bars out for shorter European style bars but might opt for shortened curve ones if I can find what I want

I would change that front fork for a more classic design(with a chromed crown cover).
and i would go with brooks (if money was no issue)

You already mentioned cream tires, If the wheels are 28" i would go for the cream 28" fatfranks.
