I understand all about the science of modern light-weight wheels and shared this in my build thread, but thought it would get more views here.

I would ride the aluminum wheels with good tires and save a set of steel wheels with some vintage tires to swap over for show purposes.
 
My take on this: One of the things that made the fire road bike/klunker thing take off was the availability of 26" (559) alloy rims in sizes appropriate for balloon tires in the late '70s and early '80s. It wouldn't have been worth it to put gears on a newsboy bike if they were still having to spin S-2 rims, 11 gauge spokes and heavy blackwall knobbbies.
