i just got a mountain bike rear wheel for free with the multiple speed rear cog. i was wondering if i could turn it into a single speed rear cog?

Yes it can be turned into a single speed. Is it new enough to be a freehub or is it an older one with a freewheel? A couple of tools are needed. Go here for a good explaination.

if you mean to put on a bmx freewheel yea it is as simple as removing the gear cluster and threading on the bmx version. the trick is your chain line will be way off and will probably cause the chain to fall off. the way to fix it then is to make the spacers on each side of the hub equal. NOW you will find the tire is not centered in the frame so you will have to re-dish the rim as well.
