51' Phantom Wheelset

I am wanting to replace my old worn out bent wheels with some new. I have a 1951 Phantom and want to replace the wheelset with a 140 or 70 spoke count wheelset. Any suggestions? I am unfamiliar with sizing etc. Coaster with 26.125 size tires. I am looking for a easy put on with hub packed and ready to go. I saw a bike that had a Bendix coaster (one red band) with this type of rim. I dont know how to lace rims. Wonder how he did it? Thanks for your help.

PS. Im also looking for a Key that will fit the locking front fork. The number is : AN348
